Less drying, a well-presented display
Water loss affects leafy vegetables: leaves soften and lose firmness. Appropriate humidity can slow drying and reduce weight loss caused by evaporation. Results depend on the produce and display conditions.
On display or in storage, some fresh produce loses water and wilts when the air is too dry. Suitable humidification can reduce that water loss and help maintain appearance and firmness.

For greengrocers, food shops and supermarkets, the aim is to humidify a selected area for produce sensitive to drying, rather than mist the entire display indiscriminately. Humidification complements stock rotation and produce checks.
In refrigerated storage, humidity control can limit dehydration of certain crops. The system must be coordinated with refrigeration and the needs of the stored produce. It does not replace cooling.
Dough fermentation in bakeries and cheese ripening have their own humidity requirements. They require dedicated control projects and feasibility studies, separate from retail display misting.
Display layout and product selection come before nozzle and cycle choices. The French Agriculture Ministry's inspection guide recommends keeping fruiting vegetables such as tomatoes, courgettes and green beans, as well as mushrooms, away from humidification devices.
Settings take ambient humidity into account. The study covers water quality, filtration, circuit maintenance and cleaning, plus integration into the establishment's hygiene plan without excessive water delivery.
No. Humidity needs differ between products. Misting should be limited to suitable produce, with products sensitive to excess humidity kept outside the treated area.
No. It affects air humidity and replaces neither refrigeration equipment nor the storage temperatures required for each food.
Pressure misting sends pressurised water through small nozzles. Ultrasonic fogging creates mist inside a generator before conveying it to the display. The choice depends on the application.
Results should be checked on the produce concerned: wilting, weight loss and display condition. Results from another shop do not guarantee performance or shelf life at your site.
